“We were never the hamburger and hot dog type when we camped out. Two of our favorite campfire meals (recipes follow) include flank steak and pork tenderloin. We’d bring the meats frozen w/marinade in zipper-lock bags and used them as ice in the cooler until the night we were serving them when we’d let them thaw . . . “

Ingredients:

1 1/4 – 1 1/2# flank steak, scored

3/4 cup favorite bbq sauce

3 Tbsp soy sauce

1/4 green onion slices

3 Tbsp toasted sesame seeds

1 minced garlic clove

1/4 tsp ground ginger

Directions:

Combine marinade ingredients and pour over meat. Allow to sit refrigerated for 3-24 hrs. Place meat on greased grill and cook over hot coals 15-20 minutes or until desired doneness, turning and brushing with marinade after 10 minutes. Carve across the grain and serve (Makes 4-6 servings).
